4 Healthy Plant-Based Recipes That Are High in Protein

Protein is an essential part of any man’s diet, and there are plenty of other ways to get a sufficient serving of protein than from meat alone. We spoke with the experts at Beyond Meat, makers of plant-based meat, to get recipes that offer high protein without sacrificing good taste. And if you’re concerned about whether plant-based protein will get the job done, even top pro athletes swear by it. The New York Mets’ David Wright, the L.A. Clippers’ J.J. Redick, and the NBA’s Eric Bledsoe have all partnered with Beyond Meat to help support their game with delicious recipes that deliver clean fitness fuel.

1. Eric’s Rattlesnake Burger

Ingredients:

  • 1 brioche bun
  • 1 Beyond Meat beast burger
  • 2 slices spicy pepper jack cheese
  • Pickled jalapenos
  • 5 small or 2 large onion rings
  • 1 tablespoon spicy brown mustard

Directions: Toast brioche bun. Shallow-fry onion rings and allow to drain on paper towel. Heat a sauté pan over medium heat, adding 1 teaspoon oil. Place beast burger in center of pan. Allow to cook 4 minutes, turn, and cook 4 more minutes on other side. Build your burger just the way you like it.

2. J.J.’s Southwest Chicken Sandwich

Ingredients:

  • 10 pieces Beyond Meat chicken tenders
  • 2 ciabatta loaves
  • 1 chipotle in adobo sauce
  • ½ cup mayonnaise or vegenaise
  • 1 tablespoon vinegar
  • 1 cup coleslaw blend
  • 1 tomato
  • ½ avocado

Directions: Bake Beyond Meat chicken tenders in the oven or toaster oven according to package instructions. Finely mince the chipotle in adobo, and add in with mayonnaise and vinegar, mixing well. Slice the ciabatta loaves in half, and slather each side with the chipotle mayo, use the remaining sauce to dress the coleslaw. Put together the sandwich, piling the coleslaw on top of the Beyond Meat chicken tenders.

3. Sloppy Joe Stuffed Avocados

Ingredients:

  • ½ onion
  • 1 red bell pepper
  • 8 ounces tomato sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 cup Beyond Meat beef crumbles

Directions: Remove the seeds and ribs from the bell pepper; chop the bell pepper and onion into a small dice. Cook until nicely browned, and add the tomato sauce, Dijon mustard, Worcestershire sauce, and Beyond Meat beef crumbles. Cook until the tomato sauce has thickened, 3 to 5 minutes. Cut an avocado in half, and scoop out a little bit of the flesh, deepening the pit into a bowl. Fill with the sloppy joe filling.

4. Beyond Beef Chorizo Potato Tacos

Ingredients:

  • 1 package of Beyond Beef beefy crumbles
  • 1 potato cubed
  • Corn tortillas
  • 2 teaspoons cumin
  • 1 teaspoon coriander
  • 5 whole cloves
  • ½ teaspoon cinnamon
  • ½ teaspoon Italian seasoning
  • 1 teaspoon black pepper
  • 2 teaspoons paprika
  • 4 teaspoons apple cider vinegar
  • 2 teaspoons oil
  • Salsa
  • 3 tomatillos (husked and rinsed)
  • 1 garlic clove
  • ½ jalapeno (stemmed)
  • ½ lime for lime juice
  • ⅛ teaspoon cayenne pepper
  • 1 avocado
  • Cilantro
  • Salt

Directions: Make a paste with the chorizo spices, oil, and 6 teaspoons of water. Mix with Beyond Beef. Cook potato in a pan (until fork tender), and season with salt and pepper. Serve on tortillas with tomatillo salsa. To make tomatillo salsa: Coarsely chop tomatillos and jalapeno, and process with the rest of the ingredients until smooth.
