7 Fresh Cocktails for St. Patrick’s Day

Guinness and whiskey might be the most authentic beverages to celebrate St. Patrick’s Day, but bars and festivals are happy to pour pint after pint of lighter beer dyed a shocking shade of green. Though it’s possible to achieve the desired hue with ingredients like spirulina or wheatgrass juice, most mass batches get there with a bunch of blue dye. Even though the artificial coloring might not negatively impact the taste of your brew, it certainly doesn’t add anything.

Since you’ll be mixing liquids anyway, we think opting for a vibrant cocktail is a much better idea. We teamed up with Soltado Tequila and some of New York City’s best bartenders to bring you seven cocktails perfect for the occasion featuring fresh ingredients, bold flavors, and naturally occurring color.

All of these recipes call for Soltado Tequila, which is infused with cinnamon and spicy serrano chiles. If you’re a little shy about heat or can’t find Soltado in your area, you can always feel free to substitute your favorite añejo tequila. One way or another, these cocktails will make your St. Patty’s Day celebration tastier than ever.

1. Green Garden

Refreshing, herbaceous, and just a bit sweet, this green concoction from Upholstery Store’s Martin Preusche tastes like spring in a glass. Garnishing with candy cane beets, also called chioggia beets, makes for an extra pretty presentation, but it’s entirely optional. Don’t sweat it if you don’t own your own juicer, because you can easily get an apple and celery blend by heading to your local juice bar.

Ingredients:

  • 2 ounces Soltado Tequila
  • 2 ounces homemade apple-celery juice
  • ½ ounce jalapeño-infused honey
  • 1 ounce lemon juice
  • 2 rosemary sprigs
  • 2 thyme sprigs
  • 2 slices candy cane beet

Directions: Shake tequila, apple-celery juice, honey, and lemon juice in a cocktail shaker filled with ice and serve in an ice-filled glass. Garnish with rosemary, thyme, and beet slices.

2. Dublin Fire Brigade

Cucumbers have a soothing effect that makes them a perfect partner for spicy chiles. Try the combination in this spicy cocktail from Sarah Pencheff, who crafts drinks at Foragers Table. It has just enough kick to wake up your taste buds.

Ingredients:

  • 1½ ounces Soltado Tequila
  • ½ ounce Pür Blossom or St. Germain elderflower liqueur
  • 1 ounce fresh lime juice
  • ¼ ounce light agave syrup
  • 5 fresh cucumber slices
  • 5 Thai or regular basil leaves
  • Orange twist

Directions: In a shaker, muddle cucumber, basil leaves, and agave until well combined. Add tequila, elderflower liqueur, lime juice, and ice. Shake well and strain into a martini glass. Squeeze orange twist over glass so the oil mists over the surface of the drink. Roll twist, secure with a skewer, and use as a garnish for the drink. Serve.

3. Guillotine

As the name implies, this drink from Ivo Diaz of Garfunkel’s is one serious cocktail. With flavors that are sour, spicy, and bitter, it’s a great choice for those who don’t like things too sweet.

If you’ve never made your own infused simple syrup before, now is the perfect time to get started. Try Epicurious’s simple recipe. You can even add chiles to the mix for more heat.

Ingredients:

  • Scant ½ ounce Angostura bitters
  • ½ ounce agave
  • ¾ ounc lime juice
  • ¾ ounce spicy ginger syrup
  • ¾ ounce Fernet Branca
  • ¾ ounce Soltado Tequila
  • Cucumber slice
  • Mint sprig

Directions: Shake ingredients to combine in a dry cocktail shaker and pour over crushed ice. Garnish with cucumber and mint and serve.

4. Leprechaun in Paradise

If your knowledge of coconut cocktails starts and ends with piña coladas, it’s time you learned something new. The light sweetness and creamy texture of coconut milk really shines when paired with the herbal, slightly bitter tea syrup in this delicious drink from Gaby Brasserie Française’s Labinot Gashi. If you can’t find Sencha tea to make the syrup, just use your favorite green tea.

Ingredients:

  • ½ ounce Sencha tea syrup
  • 1 ounce green apple juice
  • ½ ounce coconut milk
  • Juice of 1 lime wedge
  • 1¾ ounces Soltado Tequila
  • Green apple slices

Directions: Combine all ingredients well and serve in an ice-filled rocks glass. Garnish with apple slices.

5. El Diablo

Another offering from Labinot Gashi, this vibrant raspberry cocktail is for all those who don’t particularly want to quaff a green beverage just because the calendar tells them they should. It’s fruity, spicy, and just sweet enough. Being a rebel never tasted so good.

Ingredients:

  • 2 ounces Soltado Tequila
  • ½ ounce honey
  • 2 lime wedges
  • 4 raspberries, plus more for garnish
  • Jalapeño slices

Directions: Muddle raspberries and several slices of jalapeño in a rocks glass. Squeeze in lime juice. Add honey and tequila to an ice-filled shaker, shake, then strain into glass. Skewer one jalapeño slice and one raspberry onto a toothpick and garnish glass. Serve.

6. A Very “Clover” Mojito

Other than making fruit salad, not many people know what do with honeydew. With a distinctly refreshing flavor, the fruit gives a delicious twist to an otherwise classic mojito. Try it at home with this recipe from NoMa Social’s Michael DeFalco. You might wonder why you’ve never made a melon cocktail before.

Ingredients:

  • 1 cup cubed honeydew melon
  • 1½ ounces Soltado Tequila
  • Fresh mint leaves, plus 1 sprig
  • Juice of ½ lime
  • Splash of soda water
  • 1 ounce simple syrup

Directions: Blend melon until completely smooth. Muddle some mint leaves in a shaker. Add tequila, simple syrup, lime juice, and honeydew purée. Shake well to combine and pour over ice. Top with soda water and stir gently. Garnish with a mint sprig and serve.

7. Smitty’s Hot Cucumber

Kale in a cocktail might sound crazy, until you taste what the slightly bitter, vegetal taste does for a drink. Damian Smitty from Bar 54 at Hyatt Times Square New York, combines the green with cucumber, lime, tequila, and orange liqueur for drink that’s as tasty as it is surprising. This probably isn’t what mom meant when she told you to eat your greens, but it’s sort of close.

Ingredients:

  • 4 (¼- to ½-inch-thick) cucumber slices
  • 3 lime wedges
  • 8 kale leaves
  • 2 ounces Soltado Tequila
  • 1 ounce Cointreau or other orange liqueur
  • 1 ounce simple syrup

Directions: Muddle three cucumber slices, lime, and kale in a cocktail shaker. Add ice, tequila, orange liqueur, and simple syrup. Shake well, strain into a coupe glass, and serve garnished with a cucumber slice.
