Often times, healthy versions of our favorite sweets don’t quite satisfy our cravings — but this black bean brownie recipe will do just that. Here’s everything you’ll need:

  • Cooking spray
  • 1 15 ounce can of black beans (with no added salt or sugar)
  • 3 large eggs
  • 3 tablespoons canola oil (or another oil of choice)
  • 1 packet of the South Beach Diet Beach Shack Chocolate Shake (which can be ordered A La Carte or in a diet plan)
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • ¼ teaspoon cinnamon
  • Sugar substitute (optional, to taste)
  • Water (1 to 2 tablespoons as needed)
  • 1 tablespoon sugar-free, stevia-sweetened dark chocolate chips

Directions: Preheat your oven to 350 degrees Fahrenheit, and lightly grease either an 8×8 baking dish or a 12 slot muffin pan with cooking spray. Rinse your black beans and ensure they’re thoroughly drained. Other than your chocolate chips, combine all ingredients in a food processor. Blend until smooth. You can feel free to add 1 to 2 tablespoons of water if your batter’s consistency is too thick. Add sugar substitute to taste.

Once you’ve achieved your desired consistency and taste, pour in your chocolate chips and fold them into the batter. Another option is saving the chocolate chips to distribute on top of the batter before baking.

Pour your batter into your baking dish and allow to bake for 25 to 30 minutes. Test if the brownies are done by inserting a knife into the center. If the knife comes out clean, they’re done. If not, pop them back into the oven for a few more minutes and repeat.

Once your brownies are done, let them cool for at least 10 minutes. If you used the 8×8 baking pan, slice your brownies into 12 pieces and serve.
