Jessica Simpson Reveals the 1 Thing She Ate to Lose More Than 100 Pounds

Ask 100 people who achieved extreme weight loss how they did it and they’ll give you 100 different answers. For some people their success came in the form of grueling workouts. Others cut carbs, or joined Weight Watchers, or only ate between the hours of 12 and 3. But no matter what methods people use, they all have one important thing in common: consistency.

Fashion designer and former pop star Jessica Simpson has been struggling with her weight for years. But she recently shocked fans when she stepped out looking more svelte than ever thanks to a new eating and exercise regimen.

What has the 39-year-old mom of three been doing? It turns out most of her meals include one important ingredient.

Jessica Simpson is feeling fit and confident again

Though she looks lovely at any weight, Jessica Simpson was eager to shed the baby weight after giving birth to her third child, Birdie, six months ago. Older moms typically have a harder time dropping weight they gain during pregnancy, especially the third time around.

But Simpson made headlines when she appeared on HSN to promote her new clothing line — and show off her slimmer, trimmer figure. How did she achieve such dramatic results so quickly? The answer is simple. It’s all thanks to cauliflower.

She embarked on a lifestyle shift, not a diet

Simpson isn’t a big fan of dieting as a rule. But she was willing to adjust her meals and adopt a new mindset when it came to eating. “It’s been a lot of hard work. I have to say that I have worked very hard,” Simpson said. “Everything that I’ve been eating is mostly made with cauliflower.”

“I don’t like the word ‘diet.’ I just ate a bag of Cheetos in the back,” she joked on HSN. “I do think that writing down what we eat is important to keep ourself [sic] in check.”

Even though she’s struggled with weight gain over the years, Simpson admits that it was all worth it for her kids. Some people are genetically predisposed to gaining more during pregnancy, and that’s OK.

“When you’re pregnant, I gain a lot, I mean, a lot. I didn’t expect to gain as much with my third. I thought I’d learned my lesson, but apparently that’s just the way God made me, very hungry and pregnant,” she said.

“I don’t think I’ll ever get back to [my skinny jeans]. I save them and say, ‘One day,’ but I think after having kids, I don’t think that your hips really ever go completely back,” she continued. “All worth it! Your body changes.”

She added an exercise regimen, too

Cauliflower isn’t the only thing that helped Jessica Simpson slim down. Besides adopting a healthier diet, she also incorporated working out into her busy schedule. “I work out probably four days a week. I do get my steps,” she explained. “I have to count my steps. I have to walk. Even if I’m crying through it. Just binge watch a good TV show or something.”

Clearly, all of Jessica Simpson’s hard work and cauliflower meals are paying off! She looks fantastic, and we wish her the best.
