Grilled zucchini is a light summer side dish

Home cooks who want to provide a light side dish for their Memorial Day festivities could do worse than Drummond’s recipe for grilled zucchini. This recipe, which can be prepared in under 30 minutes, calls for only six ingredients: whole zucchini, olive oil, salt, pepper, and lemons, zested and juiced. 

To prepare the zucchini, slice the vegetables into lengthwise quarters and place them in a large Ziploc bag. Into the bag, pour olive oil, salt, pepper, lemon zest, and some lemon juice. Squeeze the bag to coat the zucchini in the marinade. When you are ready to grill the zucchini, place them on a medium-high grill and keep turning until all sides are evenly cooked. After removing the zucchini from the grill, chop up the remaining salt and lemon zest and sprinkle the mixture on top of the grilled zucchini.

Everyone needs a delicious dessert to adorn their Memorial Day table, and there’s no better option than Ree Drummond’s raspberry crisp. In a bowl, combine fresh raspberries, cornstarch, sugar, and vanilla. Stir it well and then set it aside while you prepare the crumb topping.

For the crumb topping, combine flour, sugar, brown sugar, old-fashioned oats, pecans, salt, and diced butter. Mix it well and assemble the crisp by placing the raspberry mixture in a pie pan and sprinkling the crumb topping over it. Bake the crisp to perfection.
