This easy-to-make appetizer will have football fans cheering. Recipe 4 Living’s Three-Cheese Chili Bites can also be made ahead of time — simply toss them in the freezer and warm up before the big game.

Ingredients:

  • ½ stick butter, melted
  • 6 eggs, beaten
  • Dash of salt
  • 1 teaspoon baking powder
  • 1 (4 ounce) can diced green chilies
  • 1 cup cottage cheese
  • 1 cup grated cheddar cheese
  • 1 cup grated Monterey Jack cheese

Directions: Heat oven to 350 degrees Fahrenheit and put butter in an 8-by-8-inch baking pan. Melt in oven. Remove from oven and set aside. In large bowl, combine eggs, salt, baking powder, chilies, cheeses, and melted butter. Mix well and pour mixture into the baking pan. Bake 30-35 minutes or until egg is cooked in center and casserole is light brown. Cut into 1-inch squares and serve warm.

Ingredients:

  • 10 refrigerator biscuits
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • ½ cup browned hamburger pieces
  • ¼ cup crispy bacon bits
  • Black pepper
  • Onion powder
  • Egg white, beaten
  • Parmesan cheese, grated

Directions: Preheat the oven to 425 degrees Fahrenheit. Flatten the refrigerator biscuits and top them with shredded mozzarella cheese, shredded cheddar cheese, browned hamburger pieces, and bacon bits. Then, add a little more cheese, if desired, and sprinkle with some black pepper and onion powder. Gather the edges up around the toppings and pinch together at the top.

Place the pizza balls into a greased pie pan with the seam on the bottom. Brush the tops with a beaten egg white. Sprinkle the tops with grated Parmesan cheese. Bake at 425 degrees Fahrenheit for about 15 minutes or until golden brown. Serve with pickle slices and ketchup.

Ingredients:

  • ½ cup (1 stick) unsalted butter
  • 1 small onion, chopped (about ½ cup)
  • 1 teaspoon minced garlic (about 1 clove)
  • 2 (10 ounce) packages frozen chopped spinach, thawed and drained
  • 1 (8 ounce) bag of herbed seasoned stuffing mix
  • 6 large eggs
  • 1 cup grated Parmesan cheese
  • Salt and pepper, to taste

Directions: Preheat the oven to 350 degrees Fahrenheit. In a large sauté pan over medium heat, melt the butter. Add onion and cook until the onions are translucent and soft, about 5 minutes or so. Add the garlic and cook until fragrant, about 30 seconds. Remove the pan from the heat and let cool. In the meantime, remove excess water from thawed spinach by pressing it between paper towels.

In a large bowl, combine the stuffing mix, spinach, eggs, Parmesan, salt and pepper, and onion/garlic mixture. Combine well. Line a rimmed baking sheet with parchment paper. One at a time, using your hands, roll the mixture into individual 1-inch balls. Place each one on the parchment-lined baking sheet. Bake the balls for about 15-20 minutes, or until very slightly browned.

4. Buffalo Chicken Cheese Bites

Say sayonara to chicken wings and hello to Buffalo Chicken Cheese Bites. Thanks to store-bought rotisserie chicken, this Made in Melissa’s Kitchen recipe, which was adapted from the Food Network, is an unbelievably simple dish to prepare. You’ll have these bite-size snacks ready to go in 30 minutes.

Ingredients:

  • 1 store-bought rotisserie chicken
  • ¼ cup hot sauce
  • 2 ounces cream cheese, softened
  • 1¾ cups sharp cheddar cheese, shredded
  • ¼ cup freshly sliced scallions, plus additional for garnish
  • 1 cups all-purpose flour
  • 3 eggs, lightly beaten
  • 2 cups panko bread crumbs
  • Vegetable oil, for frying

Blue Cheese Dip

  • 1½ cups mayonnaise
  • ½ cup packed blue cheese, broken up
  • ½ teaspoon hot sauce
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon salt
  • ½ lemon, juiced
  • 1 teaspoon chopped garlic

Directions: Have oil heated to 350 degrees Fahrenheit. Pick the meat from the chicken and discard the skin. Place the chicken in a large bowl and add the hot sauce, cream cheese, cheddar cheese, and scallions, and toss to combine. Scoop the chicken mixture onto a plate using a medium cookie scoop and roll into balls. Place the flour, eggs, and bread crumbs in 3 separate bowls.

Roll each ball in the flour, then the egg and then the bread crumbs. Set aside. When the oil is hot, fry the chicken balls in batches. Cook for about 2 minutes per batch. Remove the chicken to paper towel-lined plate to drain the excess oil. To make the dip, combine all ingredients in a large bowl and adjust the seasoning if necessary. Serve with buffalo chicken cheese bites.

Rather than serving subs or full-sized sandwiches, consider preparing these Super BLT Bites on Sourdough With Tarragon Mayonnaise instead. Return to Sunday Supper’s recipe creates tiny, tasty, and savory snacks that are worthy of any football gathering.

Ingredients:

  • 12 slices of sourdough bread (or the bread of your choosing)
  • 3 slices of bacon, thick, if you prefer
  • 6 small tomatoes
  • 1 leaf lettuce, your choice
  • ½ cup mayonnaisse
  • 1 teaspoon tarragon, snipped into small pieces

Directions: Toast 12 slices of bread, and either cut out 2 rounds or 4 quarters per piece. Cut the bacon into 4-5 pieces per slice and fry until crisp. Cut each tomato into slices. Tear the lettuce into small pieces. Mix the mayo and the tarragon together. Assemble them. On a bread piece, place a dab of the mayo, then a bit of lettuce, bacon, tomato and top with another piece of bread.

Note: Start preparing this dish the day before, as your pork mixture must be refrigerated overnight. The recipe yields 12 servings.

Ingredients:

  • 1¼ pounds boneless country-style pork spareribs, cut into ¾-inch cubes
  • ⅓ pound pork fat, cut into ¾-inch cubes
  • 1½ teaspoons finely chopped fresh sage
  • 1¼ teaspoons coarse kosher salt
  • ¾ teaspoon ground mace
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon ground coriander
  • ½ teaspoon sugar
  • ¾ cup lager beer, divided
  • Beer and Horseradish Mustard
  • Purchased soft pretzels, pretzel rolls, or rye bread

Directions: Place pork sparerib cubes and pork fat in freezer until partially frozen, about 30 minutes. Place half of pork and half of pork fat in processor. Using on/off turns, blend mixture until finely ground. Transfer mixture to bowl. Repeat with remaining pork and pork fat. Gently mix sage and next 5 ingredients into ground pork mixture. Stir in ¼ cup beer. Cover and chill overnight. Form pork mixture into 1¼-1½-inch-diameter patties; place on baking sheet.

Heat large nonstick skillet over medium heat. Working in batches if necessary, add sausage patties to skillet and cook until browned on bottom, about 5 minutes. Add remaining ½ cup beer to skillet; cover with lid slightly ajar and cook until beer evaporates, 6-7 minutes. Turn patties over and cook until brown on bottom and cooked through, about 5 minutes longer. Transfer sausage patties to platter. Serve with Beer and Horseradish Mustard and soft pretzels.

Ingredients:

  • 2 eggs (beaten)
  • ¼ cup water
  • 1½ cups Italian breadcrumbs
  • ½ teaspoon garlic powder
  • 1 cup all-purpose flour
  • 1 quarter oil
  • 1 (16 ounce) package mozzarella string cheese sticks

Directions: Slice the string cheese sticks into chunks. In a small bowl, mix together the eggs and water. In a medium bowl or pie dish, mix together the breadcrumbs and garlic powder. In a large heavy saucepan, heat the oil to 365 degrees Fahrenheit. One at a time, coat each mozzarella piece first in the flour mixture, then in the egg mixture, and then roll in the breadcrumbs. Repeat until all of the cheese stick pieces are coated. Place into the hot oil and deep fry in batches at 365 degrees Fahrenheit until golden brown, about 30 seconds. Drain on paper towels. Serve with marinara sauce on the side.
