Forget about the typical steps of making a cheesecake with this Pioneer Woman. As Drummond said on the “Easy and Elegant” episode of her Food Network show, her No-Bake Spiced Cheesecake involves “bucking the system left and right.”
She adds “warm, yummy spices” to the filling. To help promote a smooth texture, she adds some powdered sugar. It aids in “consistency of the filling because we’re not going to bake this,” Drummond explained.
What sets Drummond’s cheesecake apart from the rest is that the crust doesn’t have to be baked. All she does is combine gingersnap cookies, sugar, and butter, according to Food Network. Then she presses into the bottom of a spring form pan.

She combines graham crackers and sugar in a food processor with melted butter to make the crust. After pressing it into the bottom of a pan she puts it in the freezer to set. Meanwhile, she makes the lemon filling.
Drummond mixes together cream cheese, granulated sugar, powdered sugar, lemon juice lemon zest, and sour cream. Once it’s all combined she gently folds in whipped cream for a smooth texture. Finally, she puts the filling on top of the crust and refrigerates it overnight.
3. The Pioneer Woman’s White Chocolate Raspberry Cheesecake
Drummond’s cheesecake recipes continue with this easy no-bake cheesecake. “It’s pretty as a picture and best of all, it is incredibly easy to make,” she said of the dish on The Pioneer Woman.
“This is simple and really impressive and the best part about it is I don’t even have to turn on the oven,” she explained. The filling is a combination of softened cream cheese, raspberry puree, lemon juice, powdered sugar, and melted white chocolate.
As for the crust, it’s another quick concoction of store-bought cookies, sugar, and butter. However, as Drummond shared, softened butter is essential. “This is a no-bake crust so I’m just gonna add softened butter,” she said. “Usually, when I bake the crust, I put in melted butter. Just putting softened in will help it all stay together.”
