Teresa Giudice, one of the stars of The Real Housewives of New Jersey, has taken a liking to bodybuilding since she was released from prison. And in order to stay in such amazing shape, she has to keep a very strict diet. This means finding new, creative meals that are healthy without being too bland. And she has one meal that she absolutely loves.

Giudice first began working out while in prison

Giudice was sentenced to 15 months in prison for her role in the family’s tax fraud, bankruptcy fraud, and other charges. (Her husband, Joe Giudice, was sentenced to 41 months in prison.) Although Giudice only served 11 months of her sentence, she developed strict workout habits while behind bars. She was working out up to three times a day most days. Giudice also incorporated a lot of yoga into her routine. She credits yoga with helping her get through prison and hopes to become a yoga instructor down the road.

She also stuck to a strict prison diet

Prison food has a reputation for not being the most appealing. But Giudice found some options she liked and made sure to eat healthy while she served her time. She originally was open to anything, including options such as hot dogs and tacos. But she told People that over time, she began staying away from certain meats and ate healthy carbs. She’d start her day with oatmeal and try to stick to salad during other parts of the day. She ate a lot of chicken salad, too. The healthy diet she developed in prison helped pave the way for healthier options when she finally returned home.

When she returned home, she got into bodybuilding

When Giudice was released from prison, she wanted to stay in great physical shape. (She told People that she had dropped down to a size two while serving time.) Giudice’s husband was also about to begin his sentence, so she needed something to focus her attention on while he was away. She started to get into bodybuilding and began training for bodybuilding competitions. This requires intense gym sessions — she works out three times per day — as well as a strict diet.

She always eats grilled vegetables with egg whites before a workout

Giudice needed to find different dining options that were healthy but still enjoyable. She incorporates plenty of vegetables into her diet, and before each workout, she cooks up grilled vegetables and egg whites. Specifically, she grills zucchini in a pan until it gets some color on both sides, then adds in whisked egg whites. She told Bravo that it fuels her most intense workouts.

And she loves using egg whites to make other healthy dishes

Giudice tries to incorporate egg whites into other healthy meals, too. She also told Bravo that she frequently makes egg white omelets for breakfast for her and her daughters. Plus, grilled veggies have become a staple in her diet. However, Giudice still does like to indulge when she can. Her children planned a surprise birthday party for her with a massive dessert table, so it’s safe to say Giudice definitely has cheat days. However, her diet is what has helped her stay in such great shape since returning home from behind bars.
