The perfect weekend meal consists of a bite that is easy to prepare and comforting to eat. It’s the type of meal that is not rushed, that can be lingered over when the busyness of the workweek is done. Girl Meets Farm star Molly Yeh has developed a one-dish meal that combines everything to love about a leisurely meal into a satisfying dinner. The Food Network star crafted a warm and comforting soup that is a perfectly satisfying meal.
What is Cheeseburger Soup?
Cheeseburger Soup appears to be a flavorful midwestern staple that incorporates some of the same ingredients as a standard cheeseburger in a one-bowl meal.
This soup is the perfect comfort food for a cold winter night! It’s a fun cross between chicken soup and cheeseburgers.
All this tasty and filling soup needs is some crusty bread to dip into the soup and a side salad.
Although the soup is rich on its own, you can add toppings of bacon, sliced green onion, sour cream, or all!
On a season 8 episode of Girl Meets Farm titled “Nick’s Horn Show and the Late-Night Munchies,” Yeh featured three other fun recipes to attack the late-night munchies.
She paired Veggie Supreme Pizza Bagels alongside loaded Cheesy Pickle Nachos. For dessert, adorable Iced Dinosaur Cookies.
How to make Molly Yeh’s Cheeseburger Potato Soup
The soup is easy to make in a large dutch oven, a type of enamelware that is both stovetop and oven-safe.
Start with bacon cooked until crisp. Drain on paper towels and chop into small pieces.
Then add ground beef to bacon drippings and cook until browned. Break up the meat with a spoon in tiny pieces.
Add vegetables including onion, carrot, celery to the pot, and some seasonings, including salt and pepper. Cook until softened.
Add crushed garlic to the pot along with the mustard powder. Add raw, cubed potatoes and chicken stock to the pot along with parsley. Boil until all the vegetables are tender when pierced with a fork,
Add heavy cream and shredded cheddar cheese and stir until melted to add decadence to the soup further.
Molly Yeh’s must-haves to personalize her bowl of Cheeseburger Potato Soup
Yeh adds pickle brine to her bowl for a spicy and salty kick. She also tops her soup with ketchup and a squirt of mayonnaise.
Shredded cheddar cheese is a super creamy and melty topper perfectly paired with fried and crumbled bacon.
Yeh also toasts seeded buns and slices them into tiny croutons used as a topping for the finished soup.
