Joanna Gaines says these cookies remind her of her father

In an entry from her book Magnolia Kitchen, Gaines recalled spending time with her father in the kitchen around the age of 10, where they made Toll House cookies. This particular food memory has stayed with her throughout her adult life, and whenever she makes cookies, she says she is reminded of that happy moment.

In an interview with WBIR 10 News in Knoxville, TN, Gaines spoke of her modifications to the traditional cookie recipe.

“The chocolate chip cookie recipe in the cookbook was developed after years of experimenting with a few different classic recipes. I spent many years trying to bake the perfect batch of chocolate chip cookies — the kind that is beautiful and melts in your mouth, but I always seemed to end up with batches that were flat and didn’t have enough flavor,” she claimed.

The change came after she added more brown sugar and less butter.

“This went against my typical philosophy that butter makes just about everything taste better, but the texture and flavor of that batch hit the jackpot,” Gaines concluded.

Position a rack in the center of the oven and preheat the oven to 350 degrees.

Line baking sheets with parchment paper.

In a bowl for just dry ingredients, whisk flour, baking soda, and salt. Set aside.

For the next step, utilize either a stand mixer or a handheld electric mixer.

Beat the butter and sugar on medium-high speed until light and fluffy, 2 to 3 minutes. Add the eggs and beat until blended. Add the vanilla and beat until combined.

Turn the mixer off and then, add flour mixture to the bowl.

Mix ingredients until all the elements are incorporated.

Then, add the chocolate chips, turn on the mixer to incorporate.

Drop by teaspoonfuls on the sheet for smaller cookies, or use a tablespoon for more giant cookies.

Don’t flatten the cookie dough once on the sheet.

Bake until the top is lightly browned, for about 10 minutes. When done, transfer to a wire rack to cool.
