Joanna Gaines shared the origin of her dessert recipe

The April 5 episode of The Drew Barrymore Show featured interviews with Chip and Joanna Gaines as well as a cooking segment.

Gaines and Barrymore made strawberry lemon hand pies together. “What I love about these is it is like this nostalgic thing,” Gaines explained. “There’s something about these pies that remind me of my childhood.”

When Barrymore asked about the recipe’s origin,” Gaines explained, “So we have a little sweet truck at the Silos that we call Maggie, short for Magnolia. And it’s kind of this nostalgic food truck that’s got all these hand pies.”

She continued, “People could do this with their kids … It’s very simple. And I’m all about desserts and food that you can just get the basics and then modify it however you like. So we’re doing strawberry and lemon but the sky’s the limit on how you fill these things.”

How to make Joanna Gaines’ strawberry lemon hand pies dessert

They started by cooking strawberries over medium heat, crushing them slightly while it came to a slow boil. She added sugar and cornstarch, then removed it from the heat and allowed the filling to chill for an hour before using it.

Gaines used a pie crust for the dessert and had a tip for making it flakier: she added eggs and milk. She brushed egg wash along the edges of the rectangles of dough and added the berry filling. Then Gaines placed the top crust on it and sealed the edges, using a fork to pinch a border.

She baked the pies in a 350 degree Fahrenheit oven for 30 to 35 minutes.

To finish the pies, Gaines whisked together powdered sugar, butter, lemon juice, and lemon zest to make a glaze that she spread on the treat. “These are so organic. They’re handmade so the idea of it not being this perfect like icing or frosting,” she explained. “I like that it kind of pours off the edges.”

“These are so incredible,” Barrymore said after taking a bite.

Joanna Gaines shared her vision of ‘happily ever after’

The two chatted while making the pies, with Barrymore asking Gaines, “What’s your happily ever after?”

“We always say this,” Gaines said. “That we’re sitting on that same porch in those rocking chairs watching the sun go down and say, ‘We did it well.’ All our kids are off and gone in a really healthy good way but saying, ‘We did it well.’”

She added, “That’s it. It’s very simple. But we’re still holding hands and we still really like each other.”

Barrymore was delighted by Chip and Joanna’s solid relationship. Joanna said Chip should “write a book on how to treat a woman … He’s just a doll. He’s sweet.”
