Kourtney Kardashian is very adamant about living a healthy lifestyle. She has been vegan, keto and she’s even tried intermittent fasting. While her sister Kim Kardashian West adheres to a plant-based diet, the eldest Kardashian sister is more stringent than that.

As someone who grew up in an era where there was a lot of emphasis on being thin, Kardashian has explained she’s tried to shift her thinking to health and wellness overall.

Is Kourtney Kardashian a vegetarian?

Though she’s known for her cheat meals every once in a well, Kardashian is pretty strict about the things she puts into her bodies. This has probably helped her remain ageless as the eldest Kardashian-Janner sibling. On a typical day, Kardashian adheres to a strictly organic, gluten-free, non- GMO, vegan, dairy-free, ketogenic diet.

While this might seem overwhelming to many of us, the recipes that Kardashian has shared on her Poosh website prove that the food she eats is far from boring.

“A healthy lifestyle requires balance — allowing yourself to hit the snooze button when you really need it, skipping the gym for quality time with friends, and of course, cheat days,” she said in a May 2019 blog entry on Poosh. “Yes, indulging every once in a while is self-care. Whether you follow a strict diet or not, we all deserve days off. No guilt, and no boundaries.”

Though the mother-of-three is not into artificial candy and sweeteners, Kardashian does let her children indulge in home-made rice krispie treats, especially as an afterschool snack.

According to the reality star’s Poosh lifestyle website, she likes to sprinkle in a bit of matcha powder as an added health benefit. For this quick sweet snack you will need:

  • 1.5 bags of vegan marshmallows
  • 1 stick of organic Earth Balance butter
  • ½ box Erewhon crispy brown rice (about 3 cups)
  • *optional: add 2 tablespoons matcha powder

Making these delicious vegan treats are almost as easy as the ingredients. To begin, combine the butter and marshmallows in a heated saucepan. Stir consistently for about 10 minutes until they become smooth, but be super careful not to burn it.

Next, sprinkle in the matcha if you’ve decided to go that route. Then, fold the rice into the butter, marshmallow, matcha mixture until everything is well-combined.

Transfer the mixture onto a lined baking sheet. and spread it evenly. Let the mixture cook for at least 10 minutes. If you’d like, you can use cookie cutters to cut out fun shapes.

This is a super fun treat for kids, especially because most moms like Kardashian want their little ones to have a healthy relationship with food. “I try not to force it,” she told Health. “I teach them healthy stuff, and everything in moderation. When we go to Disneyland, we eat whatever; we’re not bringing our own snacks!”
