It might seem near impossible to find a dish everyone enjoys. However, the Pioneer Woman says she’s done it. Ree Drummond’s brie appetizer is a crowd-pleaser, according to the celebrity chef and Food Network star. Gooey cheese enveloped in mushrooms and puff pastry, it’s easy to see why.

The recipe starts with sautéing mushrooms per the Super Easy cookbook author’s instructions (get all the details on Food Network’s website). Drummond puts mushrooms — her preferred type is cremini — in a pan on the stove with onion, garlic, and herbs. 

Once they’re golden she deglazes the pan by pouring in red wine. From there she stirs them “until they’ve absorbed basically all of the wine they can possibly absorb and everything has been reduced.” At that point, she turns off the heat and leaves them to cool.

Next is the puff pastry. Drummond doesn’t bother with making homemade puff pastry for this brie appetizer. Instead, she makes it easier — and less stressful — by using the storebought stuff. 

“So baked brie uses puff pastry. This is frozen puff pastry and I let it thaw out overnight in the fridge,” Drummond said on The Pioneer Woman. “Then I took it out about an hour ago so it’s pretty soft.” 

Next comes putting all of the elements together. “Basically you want to pile the mushrooms right in the center” of the puff pastry,” Drummond explained. On top goes the wheel of brie. “Then you just bring up the sides of the puff pastry and you are basically enclosing the brie in the pastry.”  

After baking it seam-side down Drummond’s left with an elegant — and very cheesy — appetizer. “I love it, I absolutely love it,” she said. “I think this is gorgeous and it’s just as perfect with, you know, like your spouse, your sweetie, as it is for a party. It’s just one of those things that no one ever doesn’t love.”
