Ree Drummond has found another way to get creative with a simple and basic recipe such as tomato soup. While she has made various versions throughout the years, the Food Network star has changed things up yet again with a version that uses grilled cheese dippers as a way to sop up all the warming tomato goodness in the bowl.

In the newest issue of her Pioneer Woman Magazine, Drummond showcased her latest tomato creation just in time for those chilly nights when only a bowl of soup will hit the spot.

Ree Drummond is a huge fan of tomato soup

This recipe is featured on the menu at Drummond’s bakery, restaurant, and store, The Mercantile. Located in Pawhuska, Oklahoma, this all-in-one stop for Pioneer Woman fans boasts a delicious and varied menu.

Visitors to The Mercantile can order any of the soups of the day with a side of grilled cheese dippers.

On the menu, it reads, “The hard part is picking which of our made-from-scratch soups you want. The easy part is dunking and devouring these sticks of the best-grilled cheese sandwich you’re likely ever to encounter.”

Underneath the menu listing is a graphic of a bowl of soup with a comment which reads, “Nothin’ says home cooking quite like a warm bowl of soup.”

The recipe for Tomato Soup with Grilled Cheese Dippers couldn’t be easier

This is Ree Drummond’s basic tomato soup recipe that she tweaked for the Mercantile version.

Ree’s tomato soup recipe ingredients include olive oil, salted butter, carrot, garlic, onion, salt, pepper, tomato paste, a can of whole tomatoes, vegetable or chicken broth, heavy cream, and basil leaves.

In a large pot, heat the olive oil and butter in a large dutch oven. Add diced carrot, garlic, and onion. Cook until softened. Add salt and pepper.

Stir in tomato paste. Then, add the whole tomatoes and boil. Simmer for around 20 minutes or so. Don’t worry if the mixture appears too chunky. That’s the next step of the recipe.

Puree the soup with an immersion blender until it is smooth. You can also use a regular blender but only fill it halfway as you do not want the hot liquid to rise and spill over the top of the blender.

Finally, add the heavy cream, salt, and pepper. Top with shredded basil leaves.
