Ree Drummond’s breakfast totchos recipe is so unique and simple

Drummond demonstrated how to make her easy breakfast totchos skillet recipe on an episode of The Pioneer Woman, claiming, “These are going to change your life.”

She started the tater tot and nachos mashup by cooking the tots according to the package’s directions, then she started to assemble everything in a skillet. “What I’m attempting to do, but not doing a very good job, is mound them kind of in the center so they’re sort of gathered up,” she explained as she arranged the tater tots base.

Drummond sprinkled Monterey jack cheese over the tots, covering them completely, “just like you would nachos, if these were tortilla chips,” she explained. Next, she added “the first little hint of breakfast,” sprinkling chopped bacon over the top of her skillet creation.

She teased, “You’re not going to believe what I’m about to do,” adding jalapeno slices next for some heat. “And you want to get it on the cheese, so when the cheese melts, it kind of just becomes one with it,” she noted.

Drummond added sliced green onions then baked the skillet meal in the oven while she prepared the eggs.

The Pioneer Woman star cooked sunny side up eggs for the dish “because they look beautiful and because then you’ll have some egg yolk to kind of crack all over the nachos.” She heated vegetable oil in a pan and cooked the eggs slowly over medium heat, “just until the whites set but while the yolks are still really runny,” Drummond explained.

Drummond removed the skillet from the oven and finished it off by adding nacho toppings, including guacamole, pico de gallo, and sour cream, then topped everything with the eggs and a sprinkle of cilantro. “I don’t know about you but this may be my new favorite thing,” she said.

Drummond makes a variety of totchos recipes, including a buffalo chicken twist on the dish. She seasons the tots with a mixture of chili powder and cumin before baking them. While they’re in the oven, she cooks chicken in a skillet, adding garlic, celery, scallions, and hot sauce.

Then The Pioneer Woman star piles up the tots, covers them with cheese, and spoons the buffalo chicken over the top. After adding another layer of cheese, she places the pan under the broiler.

Drummond makes a blue cheese and ranch dressing combination to drizzle over the top of the totchos and garnishes her simple snack with celery leaves and green onions.
