‘The Pioneer Woman’: Ree Drummond’s Easy Burritos Recipe Is a Ladd-Approved 16 Minute Meal

Ree Drummond’s beef and bean burritos are a family favorite recipe that’s adored by her husband Ladd. The Pioneer Woman star’s easy burritos take very little time to prep and are ready in just 16 minutes.

Ree Drummond makes an easy and hearty beef and bean burritos recipe

Drummond demonstrated how to make her beef and bean burritos recipe on an episode of The Pioneer Woman. “This is one of those recipes that’s almost not even a recipe,” she explained. “They are so simple. In fact, the first time I made them for Ladd it was totally on a whim but he told me they were the best things he’d ever eaten and I’ve been making them ever since.”

She cooked diced onions and added ground beef to the skillet. Once the meat was browned, she seasoned it with salt and pepper, cumin, chili powder, and oregano. She added Mexican red sauce next, noting, “I don’t want the meat to be swimming in sauce. I just want it to kind of lightly coat the meat.”

Drummond let the meat mixture simmer and she warmed up refried beans in another pot. She shredded cheese for the burritos next. “I’m using sharp cheddar because it gives the burritos a really nice flavor,” she explained, then added the cheese to the beans so it melted.

The Pioneer Woman star assembled the burritos by first microwaving the tortillas to soften them. She spread the cheese and refried bean mixture on a tortilla, topped it with the meat mixture, and rolled the tortillas. Once she assembled the burritos, she placed them in a baking dish, poured red sauce over them, and sprinkled the remaining cheese over the top.

She baked the burritos until the cheese melted.

Ree Drummond shared some additional ingredients to make the burritos even better

Drummond shared more details about her burritos recipe in a 2010 blog post on The Pioneer Woman website. She explained that she had been gone for the day and upon getting home had to get food on the table quickly. “When I arrived home at 7:00 last night, Marlboro Man and the boys were sitting at the dining table and banging their forks,” she wrote. “I felt doomed and began to cry. Then I got my second wind and made them beef and bean burritos, which took exactly sixteen minutes to get on the table.”

She also made note of some of the ways the meal could be even better. “If I was making this for myself, I would also add the following inside the burrito: Mexican rice, sour cream, guacamole, chopped black olives, diced green chilies, chopped tomatoes,” Drummond explained.

“But if I tried doing that for my three boys, they’d seriously call the sheriff,” she added.

Drummond admitted, “I know this isn’t going to win any culinary awards for innovation. But for a sixteen-minute meal, it was pretty darn delicious.”
