Ree Drummond‘s cauliflower fried rice is the perfect healthy dinner idea that’s packed with vegetables. The Pioneer Woman star’s recipe is simple to pull together and has so much delicious flavor.

Ree Drummond likes to remake recipes so they’re more healthy

Drummond demonstrated how to make her cauliflower fried rice during an episode of The Pioneer Woman dedicated to “healthy-ish” recipes.

“Through the years I have found the most success making healthy-ish recipes,” she explained. “I don’t go whole hog and completely change my way of cooking — I just do little tweaks to my existing favorite recipes and I really love that approach.”

The Food Network host continued, “You know, it never really works to make just a complete, extreme abrupt change to the things you’re doing. That’s why I like the concept of ‘healthy-ish.’ Over time, you just learn tweaks to make your recipes a little bit lighter and I think that is the best long-term approach.”

How to make Ree Drummond’s cauliflower fried rice

Drummond shared the easy steps for her healthy cauliflower rice. “As I experiment more and more with healthy-ish recipes, there is one ingredient I reach for time and time again — cauliflower,” she said.

Drummond continued, “It is such a versatile ingredient. I absolutely love it. And I’m getting ready to make a batch of cauliflower fried rice. Of all the things I have made with cauliflower recently, this is the winner. It is delicious.”

She worked in batches to pulse cauliflower in a food processor until it resembled small crumbs. Then Drummond heated vegetable oil and toasted sesame oil in a skillet. “And a little goes a long way, she said. “I have made the mistake before of using too much sesame oil — it can really take over pretty quickly.”

The Pioneer Woman star added garlic, fresh ginger, green onions, chili paste, grated carrots and spinach to the pan. “I really like simple stir fries like this,” she explained. “It tastes like something I would get as takeout at one of my favorite Asian restaurants in Tulsa. Being able to make it at home is just so nice.

After the spinach wilted for 2 minutes, she added the chopped cauliflower. “I mean it looks like rice. It’s really amazing. And if you’re trying to cut carbs, rice is definitely not the thing you want to eat. So this is the perfect stand-in and it has such amazing flavor.”

She stirred the ingredients and cooked the mixture until the cauliflower was tender, about 3 minutes.

‘The Pioneer Woman’ star added a runny egg to the cauliflower rice

Drummond finished the dish by adding soy sauce and stirring everything again. She had one extra addition to take the meal over the top.

The Pioneer Woman star served the cauliflower fried rice on a plate with a sunny-side-up egg on top, a sprinkle of toasted sesame seeds, sliced onions, and a drizzle of sriracha. “I mean this looks like I ordered it in a restaurant,” Drummond said. “I could not be more excited.

She added, “You’ve got to try it this soon as you can. I promise you’re going to love it.”
