Ree Drummond makes a lot of hearty cowboy-friendly meals, including a quiche recipe that’s the perfect lunch or dinner idea. The Pioneer Woman star loads her quiche with bacon and cheese and the whole dish comes together quickly.

Ree Drummond’s quiche is cowboy-friendly and customizable

Drummond wrote about her cowboy quiche in a 2013 blog post on The Pioneer Woman website. “A deep dish delight packed with caramelized onions, bacon, and sharp cheddar cheese,” she wrote. “Real cowboys eat this quiche!”

“Oh, do I love this quiche. I included it in my second cookbook and is similar to the quiche I posted here back in the dark ages of 2009, but without the gnarly mushrooms, and with cheddar instead of Swiss,” Drummond explained. “Swiss cheese and mushrooms are not a cowboy’s idea of a good time. I’m sorry about the sweeping generalization, but on this cattle ranch, I have found it to be true.”

The Food Network host continued, “But really, this quiche recipe is merely a canvas for you. You can add absolutely anything that crosses your mind: asparagus, prosciutto, diced ham, little chunks of cream cheese, herbs, shrimp, sausage … and/or any vegetable you want.”

She added, “My favorite quiche ingredient is sauteed leeks, but I’m crazy weird, unpredictable, and dangerous that way. Yep, that’s me.”

Drummond promised, “You will never look at quiche the same way again. This is divine! And you can change it up however you’d like.”

How to make Ree Drummond’s easy quiche recipe

Drummond demonstrated how to make her cowboy quiche recipe during an episode of The Pioneer Woman. She was making a lunch for husband Ladd and her daughter Paige.

“For the main course, I am making a cowboy quiche. It is absolutely delicious,” she shared. L”add won’t even know he’s eating quiche — it’s got bacon and onions and all sorts of flavor.”

She started by whisking together eggs, heavy cream, salt, and pepper. “People don’t understand that you can make quiche however you want,” Drummond noted. “I like to make them really cheesy, really meaty.”

She cooked sliced onions in a skillet with butter over medium heat for 15 to 20 minutes, stirring occasionally, then allowed the caramelized onions to cool before adding them to the egg mixture. “Now this looks like a lot of onions and that’s because it is,” the Food Network host said. “It is the most delicious flavor and caramelizing them first is really the secret.”

She added chopped cooked bacon and grated sharp cheddar cheese to the egg mixture. “Now, if I’m making this quiche for my buddies, I’ll used swiss cheese instead of cheddar,” she said. “I happen to love that option.”

‘The Pioneer Woman’ star makes a simple crust recipe

Drummond made her easy homemade foolproof pie crust for the quiche. She combined flour, salt, and sugar in a food processor, added cubed cold butter, pulsed the mixture, then added more flour, and pulsed it again. Drummond put it in a bowl and sprinkled cold water on it, then mixed everything until it formed a dough. She shaped it into two disks and chilled it.

The Pioneer Woman star rolled out the crust, placed it in a tart pan, and poured the filling in. She placed the quiche on a sheet pan, covered it with foil, and baked it in a 400 degree Fahrenheit oven for 45 minutes then cooked it uncovered for another 10 minutes. She recommended allowing it to sit for 15 minutes before serving.
