‘The Pioneer Woman’: Ree Drummond’s Easy Chocolate Mug Cake Recipes Take Just 90 Seconds

Ree Drummond’s chocolate cake in a mug recipe couldn’t be easier

While demonstrating how to make the chocolate mug cake on The Pioneer Woman cooking show, Drummond pointed out how perfect the recipe is for college kids. “So you’re a college student, you’re up late at night studying, and suddenly you get a hankering for something warm, sweet, and comforting,” she said. “All you’ve got to have is a microwave and you can make chocolate cake in a mug.”

“This is absolutely amazing,” she added. “It’s so simple — you just put the ingredients right into the mug!”

Drummond pointed out the many great uses for microwaves, but making a mini-cake in a coffee cup tops her list. “Baking in a microwave is pretty much a revelation and what’s great about this cake is you don’t have to have a mixing bowl,” she said. “The mixing bowl is the coffee mug itself.”

It’s almost too easy to make Drummond’s chocolate mug cake. Add flour, sugar, cocoa powder, salt, and baking powder to a microwave-safe mug and stir to combine everything. Add milk, oil, and vanilla, then stir again to mix together the wet and dry ingredients.

For an extra bit of richness in each bite, Drummond recommends the addition of semisweet chocolate chips, which she stirs in at the end.

Bake the chocolate mug cake in the microwave for 90 seconds, remove, and allow it to cool for a minute or so before diving in. “It’s nice and crisp on the surface and then soft in the middle,” she said. You can add ice cream, whipped cream (or both!) for an extra delicious personal dessert.

Ree Drummond has other mug cake recipe variations that are just as easy

If you’re looking for a cake with extra ooey-gooey goodness, Drummond’s chocolate caramel mug cake fits the bill. It comes together in the same way as her traditional chocolate mug cake, but has slightly fewer chocolate chips, and adds finely chopped pecans and soft caramel squares.

Once the mug cake bakes in the microwave, Drummond adds either marshmallow cream or vanilla ice cream and caramel sauce before serving.

Drummond even developed a red velvet mug cake that includes the signature color as well as a recipe for a traditional cream cheese frosting. The frosting recipe makes a small portion so you can frost just your mug cake without having to scale down a full frosting recipe.
