Ree Drummond loves the Christmas holiday season. She looks forward to certain things during this time of the year, including decorating, cooking, baking, and spending quality time with family and friends. This is a time when life on her family’s Oklahoma ranch slows down a bit, and the Drummond crew can reconnect. It is also a time for her Ree and husband Ladd’s college-aged children to return home from school, where they will find a home a bit different than when they left in terms of Christmas cheer.

Ree Drummond has changed her Christmas decorating style

In an interview with Mashed, Drummond admitted that she used to be very low-key in terms of Christmas decorations. That was until her older children went away to school.

“I would’ve put myself in the low percentile in terms of how much I would do. I always have had a big tree, but I just never really had filled my house with much decor,” Drummond admitted.

“But in the past five, six years, I have decided that more is more. I think when my kids left home, I wanted them to come home from college and beyond, and really walk in and see that Christmas exploded in our house,” she exclaimed.

There are several must-have holiday sweets on the Drummond table at Christmastime. These include Ree’s infamous cinnamon rolls, her father-in-law Chuck’s fudge, and bread pudding.

However, there are also cakes, particularly those that have holiday flavors, that make it to the family’s dessert table.

One of these is a Gingerbread Cake, a perfect treat for company paired with a mug of hot coffee.

Baked as a sheet cake and topped with a lemon and cream cheese frosting, this combination of flavors makes it perfect for the season and an easy dessert.

Drummond said that this “fluffy frosted cake is packed with all the gingerbread flavors you know and love—ginger, cinnamon, cloves, and more” on her Pioneer Woman website.

The ingredients for this moist and delicious cake include flour, baking powder, ground ginger, cloves, and cinnamon, salt, baking soda, and molasses.

Also needed are hot water, sugar, a stick of butter, eggs, and vanilla.

Preheat your oven to 350 degrees. In one bowl whisk together the dry ingredients.

In a separate bowl, mix together the wet ingredients. Then, combine them together, being careful not to overmix.

Spray a 13×9-inch cake pan with baking spray. Pour batter into the pan and bake for 25 to 30 minutes or until a toothpick inserted into the center comes out clean. Let cool completely before adding frosting.

The frosting ingredients include cream cheese, butter, powdered sugar, and lemon zest.

Beat cream cheese and butter in a large bowl until combined. Then add powdered sugar on a low setting and beat until combined. Add lemon zest and continue to beat until the mixture appears fluffy. Place icing on cooled cake.
