Ree Drummond loves to entertain. Whether a more significant or more intimate celebration, she is a big fan of recipes prepared ahead of time. She also enjoys those that don’t require much babysitting on her part and pack a big wow factor. The Pioneer Woman star created a recipe for a longstanding retro favorite, French Onion Soup, and modified it for the Instant Pot. It’s a perfect, no-fuss way to ring in 2022.

‘The Pioneer Woman’ Ree Drummond loves all types of soups

Drummond has shared dozens of soup recipes throughout 29 seasons of production of her Food Network show. Many of her creations have a protein base, while others are loaded with vegetables and all types of pasta.

These soup recipes are family favorites handed down from the Drummond family and her mom Gerre. However, Drummond has also invented plenty of warming meals that are quick, easy, and hit the spot on a cold winter’s evening.

When it comes to the last night of the old year, The Pioneer Woman star claimed she would rather not spend the evening standing over the stove.

“The last thing you should do on New Year’s Eve is spend all night in the kitchen. That’s where this quick Instant Pot soup comes in handy. It’s rich, decadent, and so easy to make,” she wrote on her Pioneer Woman website.

What are the components of French Onion Soup?

Tomato Soup is one of Ree Drummond’s favorites.

The base of French Onion Soup is generally made with caramelized onions, beef broth, white wine, bay leaves, and thyme.

It is a decadent soup that is top with a crusty piece of bread and melted cheese.

One critical step of stovetop cooking is eliminated for the Instant Pot version, but the rich taste remains the same.

“The best part of this recipe is that you don’t need to stress about caramelizing the onions until they’re the perfect shade of golden brown. Though they won’t look as dark as the jammy situation that happens on the stovetop, pressure cooking will ensure that you don’t sacrifice any of the richness you’d expect from this classic soup,” said a statement on the Pioneer Woman website.

The ingredients for Ree Drummond’s Instant Pot French Onion Soup include butter, olive oil, yellow onions, garlic, sugar, thyme, flour, and white wine.

Also needed are beef stock, Worchestershire sauce, salt, pepper, a bay leaf, french bread, and shredded swiss cheese.

The recipe has several steps, but none are too complicated.

Add butter and oil to a 6- or 8-quart Instant Pot and set to saute. Melt butter, then add onions, garlic, and sugar. Lock Instant Pot and, using high pressure, cook for five minutes. Release pressure and remove the lid.

Place thyme into Instant Pot, set to saute, and cook for almost 20 minutes.

To a bowl, add flour and wine. Dump into the Instant Pot and cook for a couple of minutes. Then add broth, Worchestershire sauce, salt, pepper, and bay leaf. Cook on high for 5 minutes on high pressure.

Once the soup is done, place it into oven-safe bowls. Top with one piece of crusty, toasted bread. Then cover with Swiss cheese, and place under broiler until cheese is bubbling and brown.
