Ina Garten has recipes for pasta and bread but the best-selling cookbook author also has gluten-free recipes. In true Barefoot Contessa style, they’re easy and simple to make. 

1. Garlic Roasted Potatoes

A classic — and extremely popular — Barefoot Contessa dish is Garten’s Garlic Roasted Potatoes. Originally featured in her second and favorite cookbook, Barefoot Contessa Parties!, the recipe calls for only six ingredients. 

Garten cuts potatoes before tossing them with olive oil, salt, pepper, and garlic. After roasting in the oven for about an hour they’re sprinkled with minced parsley. As Garten says, how easy is that? Plus, not only is this simple potato dish gluten-free, it’s dairy-free and vegetarian. 

Ingredients for the Barefoot Contessa’s Garlic Roasted Potatoes:

  • 3 pounds small red or white potatoes
  • 1/4 cup good olive oil
  • 1 1/2 teaspoons kosher salt
  • 2 tablespoons minced fresh parsley
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons minced garlic (6 cloves)

2. Fiesta Corn and Avocado Salad

From Garten’s Cooking for Jeffrey cookbook, her Fiesta Corn and Avocado Salad combines fresh ingredients to make the perfect gluten-free side for the summer. The celebrity chef advises making this with fresh corn. “You could use frozen corn but it really never tastes the same,” she said on an episode of Barefoot Contessa

Ingredients for the Barefoot Contessa’s Fiesta Corn and Avocado Salad:

  • 3 ears corn, preferably yellow, shucked
  • Kosher salt and freshly ground black pepper
  • 1 pint heirloom cherry tomatoes, halved through the stem
  • 1 Holland orange bell pepper, cored, seeded, and 1/2-inch-diced
  • 1/2 cup medium-diced red onion
  • 2 jalapeno peppers, seeds and ribs removed, minced
  • 1 1/2 teaspoons grated lime zest
  • 1/4 cup freshly squeezed lime juice (3 limes)
  • 2 tablespoons good olive oil
  • 1 teaspoon minced garlic
  • 1/4 teaspoon chipotle chile powder
  • 2 ripe Hass avocados, large-diced
  • Juice of 1 lemon

3. Balsamic Roasted Beef

A main course worthy of a “How easy is that?” from Garten, the 73-year-old’s recipe for Balsamic Roasted Beef is unbelievably simple. She makes a sauce of Dijon mustard and balsamic vinegar before roasting a filet of beef for 30 minutes in the oven. 

Ingredients for the Barefoot Contessa’s Balsamic Roasted Beef:

  • 2 1/2 pounds filet of beef, trimmed and tied
  • 1 tablespoon aged balsamic vinegar
  • 2 tablespoons Dijon mustard
  • 1 teaspoon kosher salt
  • 1 tablespoon coarsely cracked black pepper

4. Chicken Salad Veronique

Garten has many salad recipes but her take on a classic chicken salad’s practically foolproof. Once the chicken has roasted and cooled, the salad is ready as quickly as a few ingredients can be chopped and tossed together.

Ingredients for the Barefoot Contessa’s Chicken Salad Veronique: 

  • 4 split (2 whole) chicken breasts, bone-in, skin-on
  • Good olive oil
  • Kosher salt and freshly ground black pepper
  • 1/2 cup good mayonnaise
  • 1 cup small-diced celery (2 stalks)
  • 1 1/2 tablespoons chopped fresh tarragon leaves
  • 1 cup green grapes, cut in half
