Which ‘Barefoot Contessa’ recipe should you make for a post-COVID dinner party?

The pandemic has affected everyone in different ways. Families and friends haven’t been able to gather with one another like they could previously. Garten’s famous dinner parties had to be put on hold. She was, however, able to film The Barefoot Contessa on her own from her home.

But now, with people around the United States of America getting vaccinated at fast rates, the light seems to be at the end of the tunnel for a lot of people and Garten has started thinking about post-pandemic meals.

“I’m so excited to start thinking about having my friends for dinner again!!!” she captioned a photo of a delectable pasta dish. “(Once they’re vaccinated!!) I miss them so much. Since everything around me feels like Spring, I’m thinking about making the Spring Green Spaghetti Carbonara from my new book Modern Comfort Food. I took a delicious – but very rich! – classic pasta dish and added crisp green vegetables like asparagus, peas, and snow peas that add a wonderful freshness to a decadent carbonara. Plus a nice chilled glass of Chablis and I think my guests will be very happy!!”

Garten’s followers were quick to volunteer themselves as dinner guests.

“That looks absolutely incredible,” one person commented on the post. “I will be your friend and come to eat that beauty! I am vaccinated.”

“I’m vaccinated. Can I come to dinner?” another asked.

“My two favorites in one post! Ina and Carbonara. Doesn’t get much better than that,” one person added.

How to make the spring green spaghetti carbonara

To make this Barefoot Contessa recipe, you will only need a few ingredients. Kosher salt, black pepper, spaghetti, snow peas, asparagus, olive oil, pancetta, heavy cream, two eggs, Italian Parmesan cheese, scallions, chives, and the zest of a lemon combine to make this spring time dish.

Barefoot Contessa: 3 of Ina Garten’s Best Lunch Recipes for a Crowd

First, salt some water and bring it to a boil. Add the spaghetti noodles and cook. Take out a cup of pasta water and set it to the side, add the snow peas and asparagus. After two minutes, drain the pasta water.

In a skillet, heat some oil and add the pancetta. It should take 7-9 minutes for it to brown. Take it off the heat and place onto a paper-towel lined plate. Fill a bowl with hot tap water. Before you drain the pasta, pour the water out of the bowl and put the cream, eggs, yolks, and reserved pasta water into the bowl and mix. Quickly add the hot pasta and vegetables and toss. Add 3/4 cups of Parmesan, scallions, chives, lemon zest, lemon juice, salt, and pepper. You can serve the meal with chives and Parmesan on top.
