It’s a pretty well-known fact that superstar singer Carrie Underwood is a fitness enthusiast and is the type of person who, faced with some downtime, will opt for a sweaty workout instead of a nap.

Now she’s sharing the satisfying lunch she’s been turning to while sheltering in place with her family while caring for her kids, doing laundry, and getting those crunches in.

What she’s doing lately with her family

Underwood, her husband retired professional ice hockey player Mike Fisher, and their two children, have been hunkering down like the rest of the country during the ongoing global health crisis. The singer had been on the road promoting her new book, Find Your Path, in early March when the U.S. began sheltering in place.

The country star and her husband shared the message to just stay home on the Nashville Predators’ social media pages.

“To help the health of our community, we’re asking everyone to stay at home as much as possible and practice social distancing,” Fisher said in the couple’s message from their Tennessee home.

Underwood chimed in, “Working together we can stop the spread of COVID-19. Do your part, stay apart.”

Underwood’s new book, ‘Find Your Path’

The mother of two’s new book, Find Your Path, is clearly a labor of love on a topic very close to her heart: fitness and wellness. The book includes meal plans, recipes, a workout journal, and workout programs. In it, Underwood reveals how she herself makes the time to exercise and care for herself while balancing her musical career, children, her marriage, and her parents as they age.

The book unveils the American Idol champion’s Fit52 workout, with a deck of cards and exercises you can do anywhere. Her book’s publication coincides with the launch of hew new fitness app, fit52, which is free to download with a monthly subscription fee.

“It all started with a love for health and fitness and has blossomed into lots of things. I live and breathe and sleep and eat all of this . . . nothing in the book or in the app or anything is weird or unattainable, it’s practical,” Underwood told USA Today in Mar. 2020. “That’s what it’s all about.”

Carrie Underwood’s satisfying lunch

Underwood’s favorite lunch is as practical as her approach to fitness.

The Oklahoma native was raised around cattle and the farming life, but has chosen to eat, for the most part, a vegan diet. So it makes sense that her filling lunch is heavy on veggies and whole grains.

It’s easy to make; you can even make it with a bag of your favorite frozen vegetables.

She told JustJared that “This (recipe) illustrates how my approach to health can be summarized in one word: simple. I’m not about fancy cooking or complicated workout routines. I’m a vegetarian, but I’m not soaking dried beans and making hummus from scratch.”

The 37-year-old’s recipe, which can be found in her new book as well, consists of your favorite lean protein, a bag of frozen vegetables of your preference, cooked brown rice, light soy sauce, and whatever seasonings you like. That’s it. Heat the protein, vegetables and rice up in a microwave or on your stovetop, add your seasonings, and enjoy!
