Lizzo has been open and honest about her body positivity and self-care journey. In the summer of 2020, after being a vegetarian for years, she fully committed to a vegan lifestyle.

The “Good As Hell” singer has been focused on looking and feeling her best, and with a more relaxed schedule amid COVID-19 restrictions, she had time to experiment with new things. “As a new vegan, I’m enjoying exploring flavors from plants & plant-based proteins!” she shared on TikTok. “Every journey is personal & deserves to be celebrated.

Lizzo has indulged in a slew of yummy vegan dishes, but her Brussel sprout vegan nachos are top tier.

What does Lizzo eat in a day?

There is nothing dull about Lizzo’s vegan diet. Though she switches it up every day, she shared on TikTok that her go-to breakfast meal is a yummy smoothie. It includes coconut water, kale or spinach, and frozen fruit.

For lunch, she also shared that she loves to have a massive salad. The one she shared had kale, some red cabbage, broccoli, a slice of avocado, some white onion, and some carrots. Lizzo has also found plant-based snacks to replace some of her favorite non-vegan snacks like Cheetos. However, her peanut butter and jelly smoothie take the cake.

She shared, “Peanut butter and jelly smoothie, using peanut butter, frozen strawberries, oat, oak milk, a vanilla protein powder, and love from Jesus. So that was my day. I feel very good. I feel lit and full.”

To begin, cook your Brussels sprouts to your liking. You can choose to roast them in the oven after boiling them. Man fans of Lizzo’s recipes have been first boiling their Brussel sprouts before air frying them so that they are crispy and have more of a chip-like texture.

To do this, cut your veggies in half and cover them with some salt, pepper, and oil. Air fry the veggies for about 10 minutes at 300 degrees.

Next, you can either use meatless crumbles from the store, seasoning them to your liking. Or, if you’re adventurous like Lizzo, you can prepare your own walnut beef. To make it, combine some walnuts, bell peppers, onions, liquid smoke, cumin, and seasonings into a blender. Transfer the mixture into a pan and brown it like meat.

Once the Brussel sprouts are finished frying, cover them with your walnut meat or meatless crumbles, add salsa, guacamole if you choose, and non-dairy meat or cheese. Lizzo used some store brought Mother Raw Spicy Vegan Queso, but there are plenty of coconut and cashew-based queso recipes that you can follow instead.
