Drummond says her cheesecake shooters are easy to make. The best part about this recipe is that you don’t have to make everything from scratch. Drummond incorporates canned pie filling.

“I made these incredibly easy and exceedingly cute desserts on my Food Network show on Saturday,” says Drummond on her website. “They’re little cherry cheesecake shooters—mini desserts that use a quick cream cheese filling and (wait for it) canned pie filling. They seriously take 15 minutes to make. Maybe 16.”

The ingredients

Some of the ingredients you’ll need for this recipe are frozen sweet cherries, honey, butter, almond extract, and graham crackers. Drummond also uses whiskey, but this is optional.

“Grab the whiskey from your bedside table and splash in a little!” says Drummond. “If you’re using an open flame, be careful (you can temporarily turn it off while you pour it in). You can totally leave out the whiskey if you’re not feeling it.”

Drummond starts by mixing the cherries and honey in a medium saucepan. She cooks the mixture over medium heat until it gets hot and starts to bubble. Next, she adds whiskey and cooks it for 2 minutes. After that, she adds butter and stirs it until it’s melted. Drummond then adds lemon juice and cornstarch. After another 2 to 3 minutes, she adds the almond extract.

For the next step she pours the mixture into a bowl. Once the mixture reaches room temperature, she covers the bowl in plastic wrap and places it in the refrigerator for a few hours. You can find the complete ingredients and directions here

Assembling the cheesecake shooters

Drummond prefers to assemble her cheesecake shooters in a wine glass. However, you can use any kind of small glass dish you’d like.

“To assemble them, spoon some [graham cracker] crumbs into the bottom of a glass,” says Drummond on The Pioneer Woman website. “I used mini wine glasses (you can get them at lots of department stores or kitchen supply stores; cute!) but you can also use demitasse cups, small mason jars. Any small glass will do.”

Ree Drummond’s white chocolate mini cheesecakes

Another cheesecake recipe you might want to try is Drummond’s white chocolate mini cheesecakes. Some of the ingredients you’ll need for this recipe are butter, chocolate graham crackers, vanilla, caramel sauce, softened cream cheese, white chocolate, and chocolate chips.

During her show, Drummond says she likes to have snacks prepared ahead of time so she can feed people at a moment’s notice. It helps reduce stress when people stop by or when her family wants to eat something after an event. “It’s so nice to have ready-to-go treats in the freezer,” says the Accidental Country Girl.
