Drummond says corned beef hash is “the perfect one-pan meal for the weekend.” Although corned beef hash is available in a can, Drummond says there’s nothing like the homemade version. If you’re concerned about the difficulty level, don’t worry. Drummond reassures home cooks this is a simple dish to prepare.

“Corned beef hash from scratch is a simple one-skillet meal,” says Drummond on her website. “If you have cooked potatoes and corned beef, you’re halfway there! Use a heavy bottomed skillet that holds heat well, such as a cast-iron pan—it’ll create crispy potatoes and golden-brown corned beef.”

The type of potato you use doesn’t matter. Drummond says you can use any type of potato you desire. She goes on to explain what corned beef hash is.

“Typically, corned beef hash is made up of a mixture of cooked corned beef, diced potatoes, onions, and bell peppers,” says Drummond. “Any type of potato will work: russet, red-skinned, fingerling, or even sweet potatoes. These ingredients are cooked in a hot skillet with butter or vegetable oil until browned and crisp. A runny egg makes a great topping and a yolk-y sauce.”

The Accidental Country Girl explains that hash is “basically a potato dish in a skillet, where the potato is kind of filler.” She says corned beef is brisket that has been salt-cured. “It’s so salty and so good,” she says on her show.

Drummond uses a sweet potato and a russet potato to make this meal. She describes it as a “super scrumptious breakfast dish.” Drummond starts by roasting the russet and sweet potatoes. She makes sure to peel them and dice them into small pieces before placing them on a sheet pan. She then drizzles olive oil and sprinkles salt and pepper on top of them. Drummond cooks the corned beef hash at 425 degrees for 18 to 20 minutes.

While the potatoes are baking, Drummond cooks chopped onions and minced garlic in olive oil. At the same time, she begins to cook sunny side up eggs. Once the eggs and main dish are done, she places the eggs on top. You can get the full recipe and directions here.

Completing your corned beef hash

Once your corned beef hash is done, you can add vegetables to make it interesting. “Green vegetables like zucchini, spinach, or kale can be added to round out this one-skillet meal,” says Drummond. “If you love fresh garlic, it can add great flavor. You can add fresh herbs like thyme or rosemary at the start of cooking your potatoes or corned beef, or top the finished dish with more delicate herbs, like chopped fresh parsley.”
