Drummond’s cake calls for two cups of frozen cherries

The Food Network personality’s vibrant, red cake is easy to put together. “This is rich and delicious,” Drummond says in the video (below) for this recipe on the culinary channel’s site.

You’ll need for the cake: flour, sugar, salt, buttermilk, baking soda, vanilla extract, an egg, salted butter, and cocoa powder. Ingredients needed for the cherry sauce include frozen cherries, granulated sugar, and cherry liqueur. Lastly, Drummond calls for whipped cream to top it all off, requiring heavy cream, powdered sugar, vanilla extract, and semisweet chocolate shavings over the final dessert.

Ree Drummond’s cake comes together easily

The two cups of frozen cherries are combined with sugar and “a couple of tablespoons of cherry liqueur” in a saucepan to make “a sort of syrupy cherry mixture.” It’s boiled and cooked, the Pioneer Woman star says, for about six minutes, until it’s reduced.

In the meantime, the whipped cream can get started: add “really cold cream” to a mixer, along with powdered sugar and vanilla extract. “Whip the cream until it has stiff peaks,” Drummond adds.

Once the cake is made and cooled, it can be sliced into layers. As she instructs, “Flip it onto a cutting board and remove the parchment paper. Cut the cake in half, then cut each piece in half again, giving you 4 equal pieces.”

The first layer of the cake is gently placed on a large platter and spread with whipped cream, then with the cherry mixture. The next layer is added, and the cream and cherry sauce layers are repeated until the fourth layer tops the cake. Top with the rest of the whipped cream and garnish, if desired, with grated semisweet chocolate.

Reviewers questioned the number of people Drummond’s cake actually serves

While this cake is supposed to be for two, reviewers weren’t so sure about that.

“Delicious and actually very easy to make. Certainly impressed my husband! Too big for two so invite some friends over,” one home cook wrote.

Another reviewer added, “Great simple recipe and delicious. The amount was enough to feed my little family of 5.”

“Absolutely delicious!!! I made it for my husband’s birthday. The cake was nice and moist. … It will definitely feed more than two! I think you could easily get four to six good slices out of it. I will definitely be making this again to share with friends [and] family!,” another cake fan said.
