Valerie Bertinelli stopped by the Today Show to give viewers an update on her wellness journey. She expressed that she’s a little disappointed she doesn’t have major news regarding movement on her scale, but that her victories have been non-scale ones, and very positive at that.

Bertinelli’s start on her wellness journey

Bertinelli announced on Today in January that she’s finally addressing her weight loss issue once and for all. She started a new series on the morning show called “Start TODAY with Valerie.”

She appeared on the morning show right after the new year to explain how her parents’ deaths over the past three years have caused her to forget to care for herself. The Hot in Cleveland star has finally decided to take care of the pounds, and herself.

In an essay she posted on Today‘s website, Bertinelli laid out her emotions and her ultimate goal.

“There’s a reason that I’ve gained weight and it’s emotional. This is just a symptom of how unhappy I’ve let myself feel and become. I’m not going to let any mistakes that I make in 2020 define me as a failure. I will find a different way to look at it.”

She wishes she had more scale-y news but she is making progress

Appearing on the Fourth Hour of Today, the 59-year-old told Hoda Kotb and Jenna Bush Hager that, now a month in from starting this journey, she is feeling more at peace, more accepting of herself than she ever has. She did feel, however, that she was letting viewers down because she didn’t have a scale victory to report.

“I’m feeling really good, although watching that [lead-in showing her at a heavier weight], it’s like, ‘OK, Val, where’s the weight loss? where’s the weight loss?’ I’m still trying to let that go because I don’t think the weight ever will come off until the weight on my shoulders comes off.”

“And I really feel like it’s starting to dissipate. I’ve been having some nice FaceTime with [life-coach] Angie [Johnsey] about separating the mind from the emotion and the heart, which is doable . . . “

“Clarity is slowly starting to happen but there’s no “Before and After” picture, so it’s a little frustrating.”

The lowfat goodies she brought for the crew and viewers

The actress and Food Network star brought some recipes she’s developed and has been enjoying.

She showed viewers how to make healthier zucchini rollatini, seared scallops, and a filling one-pot chicken and kale casserole.

“I like comfort foods that also can be healthy for me.”

She sauteed two chicken breasts, cooled them, and diced the chicken. The home cook also used kale, noting her preference for frozen kale, “because it’s a lot more tender.”

Onions were sauteed along with corn starch and milk. She explained that the liquid should thicken and then chicken stock added for flavor and simmered. Kale, chicken, and diced artichokes are added, along with mozzarella cheese and cayenne pepper.

The final dusting of parmesan cheese and mozzarella and broiling of the one-pot dish in the oven completes the delicious, satisfying meal.
