Valerie Bertinelli’s Seafood Recipes Are Fresh Springtime Dishes

Anytime is a great time to enjoy seafood dishes, but springtime is the perfect time to pair the protein with fresh ingredients.

And Valerie Bertinelli’s fish recipes put shrimp, salmon, and catfish to delicious use in these three dishes from the Food Network star.

Valerie Bertinelli’s Summery Shrimp, Corn, and Avocado Dip

Packed with shrimp, corn, lime juice, garlic, and avocado, every scoop of Bertinelli’s dip is a flavorful delight. The corn is toasted, adding even more texture and a subtle sweetness to the dish.

“This is a really fresh, summery dip,” the former One Day at a Time star says in the Food Network video for the recipe. “With all fresh ingredients.” And the culinary channel’s fans wrote in to the site to agree.

“Wow! I saw this this morning and HAD to have it. Make a lot as it is simply addictive. So fresh, so simple, and absolutely amazing,” one home cook wrote.

Another reviewer loved it so much, they “made this into a salad and it’s amazing! BIG hit with my friends.”

Valerie Bertinelli’s Cold-Poached Salmon Nicoise Salad

The former Hot in Cleveland star’s Nicoise salad is bursting with flavors and textures from ingredients including Dijon mustard, fresh dill, lemons, boneless skin-on salmon, vinegar, olive oil, garlic powder, Yukon gold potatoes, eggs, green beans, frisée lettuce, romaine hearts, cherry tomatoes, and kalamata olives.

Bertinelli departs from classic Nicoise salad right off the bat with her use of salmon instead of tuna. As well, while the dish usually includes boiled potatoes, Bertinelli serves her spuds up with a crispy, crunchy texture. She first boils the potatoes, smashes them with the bottom of a glass, then fries them in oil.

Reviewers gobbled up the velvety texture of the poached fish, with one home cook writing on Food Network’s site, “Made this for dinner tonight. It was delicious and I received many compliments. A beautiful way to prepare salmon. I loved the dressing. It was a perfect compliment [sic] to the fish, eggs, and vegetables.”

Bertinelli’s Blackened Catfish Tacos

The Daytime Emmy winning host suggests setting up a little toppings bar for these yummy tacos featuring a jalapeno slaw, sour cream, chopped cilantro, chopped tomatoes, lime wedges, hot sauce, and cubed avocado.

Bertinelli explained why she likes catfish for this recipe: “Catfish is such a great fish; it’s nice and firm,” she said in the Food Network video for this recipe. “It will barbecue really nicely; it won’t come apart.”

The fish in this recipe is seasoned with Cajun spices perfect for tacos.

One home cook praised Bertinelli’s dish on Food Network’s site, saying, “These were so easy to make and they were delicious. Can’t wait to make it again!”
