Charleston’s first Pakistani restaurant delivers a true taste of home, its owner says. 

In this exclusive clip from the July 23 episode of AspireTV’s City Eats: Charleston, Ma’am Saab owner Raheel Gauba sits down with host and chef G. Garvin to discuss how his restaurant and cocktail bar recreates the unique flavors of his home country’s rich culinary traditions.

“The first time I tasted his karahi, I teared up. I said, ‘This is reminding me of my childhood. How did you accomplish this?” Gauba says as he discusses a chef’s ability to recreate a quintessential Pakistani dish in a new setting. “It’s familiar yet complex. It pays homage to Charleston, to Pakistan, and yet it’s unique in its own way. 

Gauba then gives Garvin a quick lesson in eating Pakistani food. 

“Put it on the plate. Grab a piece of naan. Scoop it up, and enjoy,” he instructs.

To accompany aromatic dishes like butter chicken and shrimp biryani, the team at Ma’am Saab has created a special cocktail menu. 

“This drink, it’s called Party in Lahore,” Gauba says of the libation made with tropical gin, grapefruit, peach, and citrus. The goal of the drink was to make you “feel good” without hitting “too hard.”

“In my mind, if I were partying in Lahore, which is a huge culinary city … this is the drink that truly gives me the good vibes,” Gauba says.

City Eats: Charleston airs Thursdays at 8 p.m. ET on AspireTV.
