Joanna Gaines has a deep, unabashed love for queso. She loves this “warm, creamy, and cheesy” dip so much that she included a recipe for it in her Magnolia Table cookbook. What makes queso so important to Texans?

In the forward to her recipe printed in her first cookbook Magnolia Table, Gaines said that the dip is so “greatly ingrained” in Texas culture that many a visitor has “arrived mildly confused regarding our devotion” only to “leave a few days later fully enlightened and brought in.”

Queso means cheese in Spanish. It is an abbreviation for chile con queso, a melted cheese dish that dates back to turn-of-the-century Texas when Tex-Mex cuisine originated, said American Express Essentials.

Texas shares a border with Mexico, contributing to the heritage and cuisine becoming an inherent part of Texan identity.

The staples for making the Magnolia at the Silos owner’s filling queso dip include butter, onion, jalapeno, processed cheese, heavy cream, pinto beans, black beans, tomatoes, cilantro, salt, and pepper.

To make this delicious dip, which Gaines says is “extremely right,” begin with a large pot where you will melt the butter over medium heat. Do not raise the heat, or the butter will burn.

Add onion and jalapeno and saute until tender. Add Velveeta and cream and heat until melted. Whisk the ingredients occasionally.

Stir in beans and tomatoes and cook for 2 minutes.

Following, stir in the cilantro, salt, and pepper.

Serve warm with tortilla chips.
